Native 'evms' Tables (All EVM Chains in One Table)

For multichain queries & spells, doing 'union all' and separate files for each chain adds a ton of extra manual overhead work, maintenance, and likely impacts query runtime. Having 'evms' tables be "native" removes much of this overhead work, and would be a HUGE analyst experience improvement.
